  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • For the Caramel Filling: ½ cup unsalted butter, 1 cup brown sugar, ¼ cup heavy cream, 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter and brown sugar until fluffy.
  4. Mix in the eggs one at a time along with the apple cider and vanilla until combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop rounded balls of dough onto a lined baking sheet, leaving space between each.
  7. Bake for 12-15 minutes until edges are golden.
  8. For the caramel filling: Melt the butter in a saucepan; stir in brown sugar and cream; bring to a boil for about 3-5 minutes until thickened; remove from heat and add vanilla.
  9. Spread a generous amount of caramel on one cookie half and sandwich with another cookie.
