  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Beat in the egg and vanilla extract.
  4. Fold in the reduced apple cider until combined.
  5. Gradually mix dry ingredients into the wet mixture alternating with whole milk until just combined.
  6. Drop spoonfuls of dough onto prepared sheets and bake for about 10 minutes until golden around edges. Allow cooling.
  7. Prepare the caramel filling by mixing softened butter with powdered sugar, reduced apple cider, vanilla extract, and caramel sauce until smooth.
  8. Assemble by spreading caramel filling between two cookies.
