  • ½ cup applesauce
  • ½ cup unsalted butter, softened
  • ¼ cup canola or vegetable oil
  • ¾ cup granulated sugar
  • ⅓ cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 tbsp unsalted butter, melted
  • ⅓ cup granulated sugar for topping
  • ½ tsp ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a bowl, mix together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, whisk together apple cider and applesauce. Set aside.
  4. Beat softened butter with granulated sugar and brown sugar until creamy.
  5. Add eggs one at a time along with vanilla extract until combined.
  6. Gradually mix in dry ingredients alternating with the apple cider mixture until just combined.
  7. Pour batter into the prepared bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool before flipping onto a wire rack and top with melted butter and cinnamon-sugar.
