  • 1 can pumpkin purée (15 oz)
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tbsp pure maple syrup
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • ¾ tsp ground cinnamon
  • Pinch cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and minced garlic. Pulse until broken down into small pieces.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. Process while slowly streaming in olive oil for about 2-3 minutes until mixed well.
  3. Gradually add ice water one tablespoon at a time until you reach your desired smoothness.
